1. Overview of the Confectionery Industry

a) Origin:

- Domestic Wastewater: This comes from the daily activities of workers and staff, kitchen areas in the facility, etc.
b) Characteristics:
- Wastewater from the confectionery industry is highly polluted, mainly containing organic matter, suspended solids, nitrogen (N), phosphorus (P), pathogenic microorganisms, and particularly floating oil and grease. If not treated, this can lead to anaerobic decomposition, resulting in foul odors.
- Systems that have been in operation for too long without regular nutrient supplementation can lead to aging and ineffective microorganisms in the treatment tanks.
- Increased wastewater flow due to higher production efficiency can overload the system, affecting the quality of treated water and failing to meet standards.
3. Treatment Technology
Choosing a wastewater treatment system depends on several criteria:

Anaerobic Tank (UASB) By introducing anaerobic microorganisms, it reduces the concentrations of BOD and COD in the wastewater. After leaving the UASB tank, the wastewater moves to the Anoxic Tank.
Anoxic Tank: This tank reduces nitrate to nitrogen gas. The anoxic microorganisms absorb nutrients and convert nitrate to nitrogen gas. The process is more efficient with the combined flow of wastewater and recirculation. The conversion to N2 occurs as follows:
- Step 1: Convert nitrate to nitrite
6 + 2CH3OH → 6 + 2CO2 + 4H2O
- Step 2: Convert nitrite to N2
6 + 3CH3OH → 3N2 + 3CO2 + 3H2O + 6OH- + 3O2
Aerobic Tank: This tank continues the processes of BOD and COD removal and converts ammonia to nitrate.
The nitrification process here converts ammonia (NH3, NH4+ ) to nitrite (NO2) and then to nitrate (NO3) through the activities of two types of bacteria Nitrosomonas và Nitrobacter:
* Nitrosomonas bacteria: Convert ammonia to nitrite NO2-
NH4+ + 3/2 O2 → NO2- + H2O + 2H+ + energy
* Nitrobacter bacteria: convert nitrite to nitrate NO3-
NO2- + ½ O2 → NO3- + energy
The BOD content in the wastewater is treated with the help of aerobic microorganisms. BOD removal efficiency can reach 85 - 90 %.
Organic matter + Aerobic microorganisms + O2 → CO2 + H2O + New biomass.
