GUIDELINES FOR BREWERY WASTEWATER TREATMENT

Alongside the growth of the brewery industry, there are significant environmental concerns such as air pollution, solid waste pollution, and especially wastewater pollution after the production process, with high levels of BOD, COD, TSS, Nitrogen, Phosphorus, and other indicators.

1. Sources of Wastewater Generation

  • Brewing and Mashing, Fermentation: Wastewater generated from this process has a very high pollution load, containing many substances such as hydrocarbons, glucose, cellulose, pentoses in husks, starch, hops, protein, vitamins, etc.
  • Wastewater from bottle washing, crate washing, filling, and bottling, and beer overflow: The wastewater from this process often has high pollutant levels and a high pH due to multiple washing stages, including hot water washing, cleaning external bottle labels, and spraying with hot alkali.
  • Cooling water and condensate: This wastewater is generally cleaner and at a higher temperature than usual, making it reusable.
  • Equipment cleaning wastewater: Generated from cleaning production equipment such as fermentation tanks, storage tanks, pipelines, and floor cleaning, this wastewater often contains high levels of disinfectants and cleaning agents.
  • Wastewater from daily activities and sanitation of staff.

2. Treatment Technology

Choosing a wastewater treatment system for a brewery depends on several criteria:

  • Flow rate, composition, and nature of each type of wastewater.
  • Suitability of available land area for construction, whether underground or above ground.
  • Estimated costs borne by the investor, operational costs post-treatment.
  • Equipment and materials used in the wastewater treatment system.
  • Ability of the system to handle increased wastewater volumes if the plant expands.

Below is the AAO technology suitable for brewery wastewater treatment:

Anaerobic (UASB) Tank: This tank uses anaerobic microorganisms to reduce the concentration of BOD and COD in wastewater. The wastewater exiting the UASB tank will be directed to the Anoxic tank.

Anoxic Tank: The purpose of this tank is to convert nitrate to nitrogen gas. Anoxic microorganisms will absorb nutrients and convert nitrate into free nitrogen. The combination of wastewater and recirculation stream enhances the denitrification process. The transformation to Noccurs as follows:

- Step 1: Convert nitrate to nitrite:      6  + 2CH3OH → 6  + 2CO2 + 4H2O

Bước 2: Convert nitrite thành N2:      6  + 3CH3OH → 3N2 + 3CO2 + 3H2O + 6OH- + 3O2           

 

Aerobic Tank: In this tank, the reduction of BOD, COD, and the conversion of ammonia to nitrate continues.

Nitrification Process: Ammonia (NH3, NH4+ ) is converted to nitrite (NO2) and then to nitrate (NO3) This process is carried out by two groups of bacteria: Nitrosomonas và Nitrobacter:

* Nitrosomonas bacteria: convert Ammonia to Nitrite. The nitritation stage is the formation of NO2-

NH4+ + 3/2 O2 → NO2- + H2O + 2H+ + energy

* Nitrobacter bacteria: convert Nitrite to Nitrate. The nitratation stage is the formation of NO3-

NO2- + ½ O2 →  NO3- + energy

The BOD in wastewater is treated with the participation of aerobic microorganisms, with BOD removal efficiency reaching 85-90%.

Organic matter + Aerobic microorganisms + O2 → CO2 + H2O + New biomass
